Choosing between a glass of wine or a cocktail can be tedious. Why bother when you can have both? Lauren Lathrop Williams of Jsix Restaurant in San Diego’s Gaslamp Quarter came up with a spin on the wine cocktail that is as fun as it is sophisticated. Semi-dry Riesling provides the base for the drink, which is then spiked with an ounce of Goldwasser. Goldwasser is a potent, earthy herbal and root liqueur that has been around since the 16th century. It’s infused with floating specks of 22-karat gold, which also float suspended in the cocktail. Tonic water adds a satisfying bite, and lemon and ginger garnish give it a refreshing nose.
In a Collins glass, combine the Goldwasser and Riesling. Add ice and top with tonic water. Garnish with the ginger and lemon twist.
