Chilled tomato-beer soup

A fruity beer, such as a lambic from Belgium or a California pale ale such as Sierra Nevada, brings out depth in vegetables that are almost sweet. The pale ale also imparts a tanginess.

Combine the tomatoes, cucumber, green onions and garlic in a blender and process until smooth.

Pour the mixture into a bowl. Cover and chill at least 4 hours.

Just before serving, stir in the beer. Season with salt and pepper. Garnish with the chives and serve at once.
Green garlic is available in farmers markets. You may substitute blanched, chopped regular garlic.
