How do you hard-boil an egg?
Serious question. For the last several years I’ve been telling you how I do it (refining the process slightly along the way). And every time I write about it, I get a flood of responses telling me, “You’re an idiot and you’re doing it wrong.”
So here’s your chance. Tell me the best way to hard-boil an egg. We’ll pick six methods to try in the Test Kitchen and then we’ll let you know how it works out.
Briefly, here’s my technique: Arrange the eggs in a single layer in a pan. Cover with water. Bring to a boil and cook 1 minute. Remove from heat and let stand until the water is cool enough to touch. Drain and shake the pan to crack the eggs lightly. Cover with ice water and peel.
