During Monday morning’s #Weekendeats chat on Twitter, participants shared what they ate for St. Patrick’s Day. We’re happy to report there were no green bagels or neon green pints of beer. Here are the highlights:

Beth from the blog Omgyummy.com celebrated by making roast green and purple cauliflower, while Greg MacIntosh from the blog Lifesapicnic.blogspot.com shared a great photo of his corned beef sandwich on marble rye with slaw. Gerry from the blog Foodnessgracious.com shared his recipe for Guinness mac ‘n’ cheese with a panko breadcrumb topping.

For dessert, the blog yumivore.com shared a photo of Guiness chocolate whiskey ganache Irish cream cupcakes and Meghan from the blog Buttercreamblondie.com made Baileys salted caramel chocolate shamrocks and Magners brown butter waffles. Elizabeth Q admitted she licked the Irish butter wrapper while making her basic butter cake with Irish butter.

Brooks Walker from the blog Cakewalkr.com gets a special shout-out for going all out this St. Patty’s Day. Walker made Irish soda bread, Irish French toast with his Irish soda bread, corned beef hash and to finish, a beautiful layered leprechaun cake.

Please join in by tweeting your #Weekendeats at us Monday morning @latimesfood and share your photos with us in our “Weekend Eats” gallery. We’ll feature some of the photos here on Daily Dish, so be sure to check back for more #Weekendeats and #Foodporn throughout the week.
