Rose doesn’t get as much respect as it should. Serious wine drinkers tend to dismiss it as not worthy of their attention, thanks to the specter of white Zinfandel. But when it’s made well, rose can be delightful. Dry and well-chilled, it is ideal for the hot days of summer.

This one, from a small estate in the village of St. Gilles in the Rhone Valley, is the color of strawberries. Despite its sweet pretty nose, the wine is very dry. Full-bodied for a rose, this is a real wine with a lovely, slightly bitter finish similar to a great aperitif. Serve it chilled--before a meal, or with shrimp, Nicoise salad, grilled fish or chicken.
