SPICY LEMON CHICKEN LINGUINE serves 4 2...

SPICY LEMON CHICKEN LINGUINE

serves 4

2 teaspoons plus 2 tablespoons olive oil, divided4

lemon cilantro chicken sausages

1 pound linguine 1 tablespoon salt

1/2 serrano chile, seeded and finely

chopped (or to taste)

1 1/2 teaspoons chopped garlic

1/4 cup chicken broth

1 cup ricotta cheese

1/2 bunch fresh cilantro (stems removed), chopped

zest of one large lemon, grated

3 tablespoons Parmesan cheese, grated

salt to taste

DIRECTIONS

1. Put the two teaspoons of olive oil in a pan that will

accommodate the sausages. Cook on high heat, browning the sausages

for five minutes. Turn off heat and cover pan.

2. Bring 6 quarts of water to the boil. Add approximately 1

tablespoon of salt and 1 tablespoon olive oil and the pasta. Boil

according to package directions. Drain. Do not rinse.

3. While pasta is boiling, in a medium pan, saute garlic and

chiles in 1 tablespoon of olive oil for 30 seconds or so until garlic

starts to turn color. Immediately add broth. Then add ricotta cheese.

Stir until cheese begins to melt.

4. Toss the hot pasta with remaining tablespoon of oil and

parmesan cheese, then add ricotta mixture and toss. Add zest and

cilantro and toss. Add salt to taste.

5. Serve with sausages. Pour any pan juices from sausages onto

pasta.

CHICKEN SAUSAGE FAMILY SUPPER

serves 4

2-3 large new potatoes, each cut into 8 pieces

3 tablespoons plus 2 teaspoons olive oil, divided

salt and pepper to taste

1 teaspoon plus 1 tablespoon crushed garlic, divided

2 teaspoon fresh rosemary, chopped (optional)

4 Tomato Basil Sausages

1 large red onion roughly chopped

1/8 teaspoon red chile flakes (optional)

12 mushrooms, cut in half

1 green or yellow bell pepper seeded and cut into large chunks

Splash of sherry or red wine

1 1/2 cups of your favorite marinara sauce( We like Trader Joe’s

Vodka Sauce)

salt and pepper to taste

DIRECTIONS

1. Preheat oven to 400.

2. Toss potatoes with salt, pepper, 1 tablespoon of olive oil and

1 teaspoon garlic. Sprinkle with rosemary if using. Place on oven pan

. Bake 20 minutes or until tender. Set aside.

3. While potatoes are baking, in a large frying pan, on high heat,

brown the sausages on all sides in two teaspoons of oil for about

five minutes. Remove sausages from pan.

4. Add 2 tablespoons of oil the crushed chiles (if using) and the

onions to the pan and cook until onions are lightly browned. Add

garlic and mushrooms. Saute for 3 minutes. Add bell peppers and

continue cooking for another three minutes. Add sherry.

5. Meanwhile, cut sausages into one-inch pieces.

6. When potatoes are done, add sausages, potatoes and marinara

sauce to pan. Cook only until hot and sausages are fully cooked.
